Chop the Uchiki Kuri in half and scoop out the seeds. No need to peel it, the skin goes soft and delicious once cooked.
Chop the squash, beetroot and carrots into bite size pieces. Put onto a baking tray and add the olive oil, garlic powder, salt and pepper and give it a mix so everything is coated.
Roast in the oven for 35-40 mins or until cooked
Once cooked place on top of your cooked grains (I used the Merchant Gourmet 5 Glorious Grains for mine)
Sprinkle with the feta and mixed seeds and enjoy! Simple, but delicious!
