Ingredients

  • 1 Uchiki Kuri Squash
  • 3 Carrots
  • 4 medium size Beetroot
  • 1 tsp Olive Oil
  • Garlic Powder
  • 80g Feta
  • Cooked Mixed Grains
  • A Sprinkle of Mixed Seeds (optional)
  • Salt and Pepper to taste


Method

  • Preheat the oven to 200 degrees
  • Chop the Uchiki Kuri in half and scoop out the seeds. No need to peel it, the skin goes soft and delicious once cooked.
  • Chop the squash, beetroot and carrots into bite size pieces. Put onto a baking tray and add the olive oil, garlic powder, salt and pepper and give it a mix so everything is coated.
  • Roast in the oven for 35-40 mins or until cooked
  • Once cooked place on top of your cooked grains (I used the Merchant Gourmet 5 Glorious Grains for mine)
  • Sprinkle with the feta and mixed seeds and enjoy! Simple, but delicious!
